The Txuleta Steak is from the Basque country, and the Cow's rear for up to 17 years before they get slaughtered. Their meat, is known as rubia gallega (or vaca vieja) and The Philosophy behind this is that the longer you leave cattle to graze on grass, in a free-range and stress-free environment, the longer it takes to develop the depth of flavour in its creamy-yellow fat, which, over time, infiltrates the meat like fine lace.
