The top sirloin butt, is located underneath the tenderloin. The Boneless Top Sirloin is more tender and juicy than the round cut , but not as tender as the Strip Loin and Tenderloin because it’s on the hip and involved in walking.Top Sirloin is ideal for wagyu tartar or mini sized steaks for tasting menus.
